RECIPE: Becca's Whole-Wheat Banana Mini Loaves
Here is a great recipe for a really delicious snack! Use it as an after-school snack or deliver it to a friend for a "just thinking of you" surprise.
Becca's Whole Wheat Banana Mini Loaves
4-5 ripe bananas, mashed, to equal at least 2 cups
1/3 c. vegetable oil
1/3 c. applesauce
4 eggs
1/3 c granulated sugar
1/3 c brown sugar
3 1/2 c whole wheat flour*
4 1/2 tsp. baking powder
1 tsp. salt**
Preheat oven to 350 degrees. Grease 5 mini loaf pans and set aside.
In a bowl, SIFT TOGETHER your flour, baking powder, and salt. Set aside.
In your stand mixer (or another bowl), mix bananas, oil, applesauce, eggs, and both sugars until well mixed.
Add the dry mixture into the wet.
Bake for about 35 minutes, let cool 5 minutes in pan, remove to cooling rack to finish cooling. Stores well in airtight container for several days
*I grind my own flour. I used a soft spring wheat and ground it on a pastry setting in my WonderMill grinder. If you want to buy flour instead of grind it yourself, look for a "soft" or "white" whole wheat.
**I love using fine pink Himalayan salt for the wonderful minerals and flavor. Any salt will do but if you haven't tried it, check it out! We buy ours from Amazon.com.
